Description

Cheesy Pepper Breakfast Bake is a hearty and flavorful breakfast dish made with eggs, cheese, colorful bell peppers, onions, and a touch of banana peppers for a slight kick, perfect for brunch or an easy weekday meal.


Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped banana peppers (mild or hot, as preferred)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • 1/2 cup cooked and crumbled sausage or beef (optional)
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13-inch baking dish with olive oil to prevent sticking.
  2. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. Stir in the shredded cheddar cheese, chopped banana peppers, diced bell peppers, chopped onions, and crumbled sausage or beef (if using). Mix until everything is evenly distributed.
  4. Pour the egg mixture into the prepared baking dish and spread it out evenly.
  5. Place the baking dish in the oven and bake for 30-35 minutes, or until the eggs are fully set and the top is golden brown.
