Description
Cheesy Mashed Potato Puffs are crispy on the outside, fluffy and cheesy on the inside, making them the perfect savory snack, side dish, or appetizer.
Ingredients
- 3 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 cup breadcrumbs (for coating)
- 2 tablespoons fresh parsley, chopped (optional)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Olive oil or cooking spray (for greasing)
Instructions
- Preheat your oven to 400°F (200°C). Grease a mini muffin tin with olive oil or cooking spray.
- If using leftover mashed potatoes, ensure they’re smooth and creamy. If making fresh mashed potatoes, season and cool to room temperature.
- In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, beaten eggs, garlic powder, onion powder, parsley (optional), salt, and pepper. Stir until evenly incorporated.
- Scoop small portions of the mashed potato mixture and form them into balls. Place each ball into the muffin tin, pressing gently to form small puffs.
- Sprinkle breadcrumbs over the tops of each puff for a crispy exterior.
- Bake for 15-20 minutes, or until the puffs are golden brown and crispy on the outside.
- Allow the puffs to cool for a few minutes before serving. Enjoy as a side dish or snack!
Notes
- For a savory twist, add crumbled cooked beef to the mashed potato mixture.
- If you prefer a different cheese, try mozzarella, gouda, or pepper jack for a different flavor profile.
