Description

Cheesy Mashed Potato Puffs are crispy on the outside, fluffy and cheesy on the inside, making them the perfect savory snack, side dish, or appetizer.


Ingredients

  • 3 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/4 cup breadcrumbs (for coating)
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil or cooking spray (for greasing)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a mini muffin tin with olive oil or cooking spray.
  2. If using leftover mashed potatoes, ensure they’re smooth and creamy. If making fresh mashed potatoes, season and cool to room temperature.
  3. In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, beaten eggs, garlic powder, onion powder, parsley (optional), salt, and pepper. Stir until evenly incorporated.
  4. Scoop small portions of the mashed potato mixture and form them into balls. Place each ball into the muffin tin, pressing gently to form small puffs.
  5. Sprinkle breadcrumbs over the tops of each puff for a crispy exterior.
  6. Bake for 15-20 minutes, or until the puffs are golden brown and crispy on the outside.
  7. Allow the puffs to cool for a few minutes before serving. Enjoy as a side dish or snack!
