Description
Creamy, cheesy, and comforting — this ground beef and rice casserole combines tender beef, savory mushroom soup, and melted cheddar cheese into a satisfying one-dish meal perfect for family dinners.
Ingredients
Main Ingredients
- 1 lb ground beef
- 1 cup uncooked rice
- 1 onion, chopped
- 1 (10 oz) can cream of mushroom soup
- 2 cups beef broth
- 1 ½ cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Cook Beef and Onion: In a skillet over medium heat, brown the ground beef along with the chopped onion until the meat is fully cooked and the onion is soft. Drain any excess fat to keep the dish from being greasy.
- Combine Ingredients: Stir in the uncooked rice, cream of mushroom soup, beef broth, and half of the shredded cheddar cheese into the cooked beef and onion mixture. Season with salt and pepper to your taste.
- Prepare Baking Dish: Lightly grease a 9×13-inch baking dish and pour the beef and rice mixture into it, spreading evenly.
- Bake Covered: Cover the dish with foil and bake in the preheated oven for 40 minutes, allowing the rice to cook through and flavors to meld.
- Add Cheese and Finish Baking: Remove the foil and sprinkle the remaining cheddar cheese evenly over the top. Return the casserole to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve: Let the casserole cool for a few minutes before serving to allow it to set.
Notes
- Use brown rice instead of white rice for a nuttier flavor, but increase the baking time accordingly, as brown rice takes longer to cook.
- For added texture and flavor, consider adding diced green peppers or mushrooms to the beef and onion mixture before baking.
