These Cheesy Cauliflower Bites are crispy on the outside, soft on the inside, and loaded with melted cheese. They make a delicious low-carb snack, appetizer, or side that both kids and adults love!
Ingredients
Cauliflower Base
- 1 medium head cauliflower, cut into florets
Cheese and Binders
- 1 cup shredded cheddar cheese (or mozzarella)
- 1/3 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup breadcrumbs (or almond flour for low-carb)
Seasonings
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste

Instructions
- Prepare the Oven and Baking Sheet: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or oil to prevent sticking.
- Cook the Cauliflower: Steam or boil the cauliflower florets for 5–7 minutes until they are tender. Drain well and pat dry thoroughly to remove excess moisture, which is important for crispiness.
- Process the Cauliflower: Chop the cooked cauliflower finely using a knife or pulse it in a food processor until it reaches a rice-like texture, ensuring it’s not too mushy.
- Mix Ingredients: In a large bowl, combine the processed cauliflower, shredded cheddar cheese, grated Parmesan, eggs, breadcrumbs (or almond flour for a low-carb option), garlic powder, onion powder, paprika, salt, and pepper. Mix everything thoroughly until well combined into a thick batter.
- Form the Bites: Using a spoon or your hands, scoop 1–2 tablespoons of the mixture and shape it into small bite-sized rounds. Place each bite evenly spaced on the prepared baking sheet.
- Bake the Cauliflower Bites: Bake in the preheated oven for 18–22 minutes. Halfway through baking, flip the bites to ensure even browning and crispiness on both sides. They are done when golden and crispy on the outside.
- Serve: Remove from the oven and serve warm with your favorite dipping sauce such as ranch, marinara, or spicy mayo for added flavor.
