Description

All the comforting flavors of a classic cheeseburger transformed into a creamy, hearty soup that’s perfect for family meals or cozy nights in.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • ½ cup onion, diced
  • 1 cup carrots, diced
  • 1 cup potatoes, diced

Liquids and Dairy

  • 3 cups chicken broth
  • 2 cups milk
  • 2 cups shredded cheddar cheese

Thickening and Seasoning

  • 3 tbsp flour
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Brown the beef and onion: In a large pot over medium-high heat, cook the ground beef along with the diced onion until the beef is fully browned and the onion is soft. Drain excess fat from the pot to keep the soup from being greasy.
  2. Create the roux: Add the butter to the pot and let it melt, then sprinkle in the flour. Cook and stir constantly for about 1 minute to eliminate the raw flour taste and to slightly thicken the base.
  3. Add liquids and vegetables: Slowly whisk in the chicken broth and milk to avoid lumps. Stir in the diced potatoes and carrots.
  4. Simmer the soup: Reduce the heat to medium-low and let the soup simmer for about 15 minutes, or until the potatoes and carrots are tender when pierced with a fork.
  5. Incorporate the cheese: Remove the pot from heat and stir in the shredded cheddar cheese gradually until fully melted and incorporated, creating a rich and creamy texture.

Notes

  • Top with crispy bacon bits or chopped pickles for an extra burst of flavor and texture.
  • For a lighter version, substitute the ground beef with ground turkey.
  • Use full-fat milk or cream for a richer soup, or low-fat milk for a lighter option.
  • Adjust seasoning with salt and pepper according to taste before serving.
