Ingredients
Jalapeño Poppers:
- 12 fresh jalapeño peppers, halved lengthwise and seeded
Cheese Mixture:
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
- 2 green onions, finely chopped
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Optional Topping:
- 6 slices beef, cooked and crumbled
Instructions
- Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare jalapeños: Slice jalapeños in half lengthwise, remove seeds and membranes.
- Mix cheese filling: In a mixing bowl, combine cream cheese, cheddar cheese, green onions, garlic powder, paprika, salt, and pepper.
- Stuff jalapeños: Fill each jalapeño half with the cheese mixture and place on prepared baking sheet.
- Add topping: Top with crumbled beef if desired.
- Bake: Bake for 15–18 minutes until cheese is melted and slightly golden.
- Serve: Serve warm with ranch or sour cream for dipping.
Notes
- For less heat, soak jalapeño halves in cold water for 30 minutes before stuffing.
- You can wrap each jalapeño with half a slice of beef before baking for extra flavor.
