Instructions

Preheat your waffle iron and lightly grease with cooking spray or butter.

In a large bowl, combine the cornmeal, flour, baking powder, salt, pepper, and sugar. Stir to combine.

In a separate bowl, whisk together the buttermilk, eggs, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. If the batter is too thick, add milk a tablespoon at a time until the batter reaches a smooth, pourable consistency.

Fold in the shredded cheddar cheese and chopped jalapeños until evenly distributed.

Spoon the batter onto the preheated waffle iron, using approximately 1/2 to 3/4 cup of batter per waffle, depending on the size of your waffle iron.

Close the waffle iron and cook for 3-5 minutes, or until the waffles are golden brown and crispy.
- Carefully remove the waffles from the iron and serve immediately, or keep warm in the oven.

For more heat, leave some of the jalapeño seeds in the batter.

If you don’t have buttermilk, you can substitute with regular milk plus 1 tbsp of lemon juice or vinegar.
