Description

Cheddar Jalapeño Cornbread Waffles are a savory twist on traditional cornbread, combining melted cheddar cheese and spicy jalapeños into crispy, golden waffles. Perfect for breakfast, brunch, or as a side dish, they bring a punch of flavor to any meal.


Ingredients

  • 1 cup cornmeal

  • 1 cup all-purpose flour

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp ground black pepper

  • 1 tbsp sugar

  • 1 cup buttermilk

  • 2 large eggs

  • 1/4 cup unsalted butter, melted

  • 1 cup sharp cheddar cheese, shredded

  • 2-3 jalapeños, deseeded and finely chopped

  • 1/4 cup milk (if needed for consistency)

  • Cooking spray or butter (for greasing the waffle iron)

Instructions

  • Preheat your waffle iron and lightly grease with cooking spray or butter.

  • In a large bowl, combine the cornmeal, flour, baking powder, salt, pepper, and sugar. Stir to combine.

  • In a separate bowl, whisk together the buttermilk, eggs, and melted butter until smooth.

  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. If the batter is too thick, add milk a tablespoon at a time until the batter reaches a smooth, pourable consistency.

  • Fold in the shredded cheddar cheese and chopped jalapeños until evenly distributed.

  • Spoon the batter onto the preheated waffle iron, using approximately 1/2 to 3/4 cup of batter per waffle, depending on the size of your waffle iron.

  • Close the waffle iron and cook for 3-5 minutes, or until the waffles are golden brown and crispy.

  • Carefully remove the waffles from the iron and serve immediately, or keep warm in the oven.

Notes

  1. For more heat, leave some of the jalapeño seeds in the batter.

  2. These waffles are perfect served with a dollop of sour cream or a drizzle of honey for a sweet-and-spicy combo.

  3. If you don’t have buttermilk, you can substitute with regular milk plus 1 tbsp of lemon juice or vinegar.

You can freeze any leftover waffles and reheat them in a toaster or oven for a quick meal or snack
