A cozy quick bread infused with chai spices and hearty oats. Warm, aromatic, and perfect for breakfast, teatime, or a lightly sweet snack.
Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
- ¾ cup whole wheat flour (or sub all-purpose)
- 1 cup rolled oats
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground cardamom
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
Wet Ingredients:
- ½ cup brown sugar, packed
- ½ cup granulated sugar
- ½ cup vegetable oil (or melted butter)
- 2 large eggs
- 1 cup milk (or dairy-free alternative)
- 1 tsp vanilla extract
- ½ cup chopped nuts (walnuts/pecans) or raisins (optional)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together flours, oats, baking powder, baking soda, salt, and all chai spices (cinnamon, ginger, cardamom, cloves, nutmeg).
- Mix wet ingredients: In a large bowl, whisk sugars, oil, eggs, milk, and vanilla until well combined.
- Combine wet and dry: Gently fold dry mixture into wet ingredients until just combined. Do not overmix.
- Add nuts/raisins: Stir in nuts or raisins if using.
- Bake: Pour batter into prepared pan and smooth the top. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Cool in pan 10 minutes before transferring to a wire rack to cool completely.
Notes
- Top with a sprinkle of oats and cinnamon sugar before baking for extra texture.
- Store covered at room temperature up to 3 days or refrigerate up to 1 week.
