Description

A cozy quick bread infused with chai spices and hearty oats. Warm, aromatic, and perfect for breakfast, teatime, or a lightly sweet snack.


Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour (or sub all-purpose)
  • 1 cup rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cardamom
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg

Wet Ingredients:

  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 cup milk (or dairy-free alternative)
  • 1 tsp vanilla extract
  • ½ cup chopped nuts (walnuts/pecans) or raisins (optional)


Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk together flours, oats, baking powder, baking soda, salt, and all chai spices (cinnamon, ginger, cardamom, cloves, nutmeg).
  3. Mix wet ingredients: In a large bowl, whisk sugars, oil, eggs, milk, and vanilla until well combined.
  4. Combine wet and dry: Gently fold dry mixture into wet ingredients until just combined. Do not overmix.
  5. Add nuts/raisins: Stir in nuts or raisins if using.
  6. Bake: Pour batter into prepared pan and smooth the top. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and serve: Cool in pan 10 minutes before transferring to a wire rack to cool completely.
