Description

Caprese Chicken with Balsamic Glaze is a delicious and visually stunning dish that pairs tender chicken breasts with fresh mozzarella, tomatoes, basil, and a tangy balsamic glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons honey or maple syrup
  • 1 cup fresh mozzarella, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon olive oil (for drizzling)
  • Balsamic glaze, for drizzling (store-bought or homemade)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove the chicken and set aside.
  3. In a small saucepan, combine balsamic vinegar and honey (or maple syrup). Bring to a simmer and cook for 5-7 minutes until it has reduced by half and becomes thick and syrupy. Remove from heat.
  4. Place the cooked chicken breasts on a serving platter. Top each chicken breast with a slice of mozzarella and halved cherry tomatoes. Drizzle a small amount of olive oil over the chicken and sprinkle with chopped basil.
  5. Drizzle the balsamic glaze over the chicken and garnish with additional fresh basil if desired.
