Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons honey or maple syrup
- 1 cup fresh mozzarella, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1 tablespoon olive oil (for drizzling)
- Balsamic glaze, for drizzling (store-bought or homemade)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove the chicken and set aside.
- In a small saucepan, combine balsamic vinegar and honey (or maple syrup). Bring to a simmer and cook for 5-7 minutes until it has reduced by half and becomes thick and syrupy. Remove from heat.
- Place the cooked chicken breasts on a serving platter. Top each chicken breast with a slice of mozzarella and halved cherry tomatoes. Drizzle a small amount of olive oil over the chicken and sprinkle with chopped basil.
- Drizzle the balsamic glaze over the chicken and garnish with additional fresh basil if desired.
