Description

Juicy pan-seared chicken breasts topped with fresh mozzarella, ripe tomato slices, and fragrant basil leaves, all finished with a sweet and tangy balsamic glaze for a perfect Italian-inspired dinner that’s quick and easy to prepare.

Ingredients

Chicken

  • 2 chicken breasts
  • Salt & pepper to taste
  • 1 tablespoon olive oil

Toppings & Garnish

  • 2 slices fresh mozzarella
  • 1 tomato, sliced
  • 2 tablespoons balsamic glaze
  • Fresh basil leaves

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides generously with salt and pepper to enhance the flavor.
  2. Heat the skillet: Place a skillet over medium heat and add the olive oil, allowing it to warm until shimmering but not smoking.
  3. Cook the chicken: Add the chicken breasts to the hot skillet and cook for 6 to 7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown.
  4. Add toppings and melt cheese: Place a slice of fresh mozzarella and tomato slices on each chicken breast. Cover the skillet with a lid and let cook for a couple of minutes until the cheese melts.
  5. Finish with glaze and basil: Drizzle the balsamic glaze generously over the chicken and tomatoes. Sprinkle fresh basil leaves on top for a burst of aroma and flavor before serving.

Notes

  • Add a spoonful of pesto over the chicken for an extra layer of Italian flavor.
  • Serve alongside a fresh green salad or your favorite pasta to complete the meal.
  • Ensure to cover the skillet when melting the cheese to help it soften quickly and evenly.
