Ingredients

Meat

  • 1 lb ground beef or turkey
  • 1 Tbsp olive oil

Vegetables & Aromatics

  • 1 onion, diced
  • 2 cloves garlic, minced
  • ½ head green cabbage, chopped

Liquids & Canned Goods

  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth

Grains & Spices

  • ½ cup uncooked rice
  • 1 tsp paprika
  • Salt & pepper to taste


Instructions

  1. Brown the Meat: Heat olive oil in a large pot over medium heat. Add ground beef or turkey along with diced onion and minced garlic. Cook, stirring occasionally, until the meat is browned and the onions are softened, about 5–7 minutes.
  2. Add Main Ingredients: Stir in the chopped green cabbage, crushed tomatoes, beef broth, and uncooked rice. Mix well to combine all the ingredients evenly.
  3. Season and Simmer: Add paprika, and season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 25–30 minutes. Cook until the cabbage is tender and the rice is fully cooked. Stir occasionally to prevent sticking.

Notes

  • Add a splash of vinegar at the end of cooking for a pleasant tangy flavor reminiscent of traditional cabbage rolls.
  • Ground turkey can be used as a leaner alternative to beef.
  • For a thicker soup, use less broth or cook uncovered for longer to reduce liquid.
