Description

A simple yet flavorful bruschetta made with fresh mozzarella, sweet cherry tomatoes, and extra virgin olive oil, served on toasted bread. A perfect appetizer or snack, with optional balsamic glaze for extra sweetness.


Ingredients

  • Fresh mozzarella (mozzarella di bufala or bocconcini, packed in water)
  • Cherry or grape tomatoes
  • Good quality extra virgin olive oil (cold-pressed)
  • Fresh garlic (for rubbing on the bread)
  • Baguette or your favorite bread for toasting
  • Balsamic glaze (optional)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven or grill to 375°F (190°C).
  2. Slice the baguette into 1-inch thick slices and arrange them on a baking sheet. Toast the bread in the oven for about 5-7 minutes or until golden and crispy.
  3. While the bread is toasting, slice the fresh mozzarella and cherry tomatoes into bite-sized pieces.
  4. Drizzle the toasted bread with extra virgin olive oil and rub each slice with a peeled garlic clove.
  5. Top each toasted bread slice with a few pieces of mozzarella and a handful of cherry or grape tomatoes.
  6. Season with salt and pepper to taste. Drizzle a little more olive oil on top.
  7. Optional: Drizzle balsamic glaze over the bruschetta for an added tangy sweetness.
  8. Serve immediately and enjoy the fresh, vibrant flavors!
