Ingredients
- Fresh mozzarella (mozzarella di bufala or bocconcini, packed in water)
- Cherry or grape tomatoes
- Good quality extra virgin olive oil (cold-pressed)
- Fresh garlic (for rubbing on the bread)
- Baguette or your favorite bread for toasting
- Balsamic glaze (optional)
- Salt and pepper (to taste)
Instructions
- Preheat your oven or grill to 375°F (190°C).
- Slice the baguette into 1-inch thick slices and arrange them on a baking sheet. Toast the bread in the oven for about 5-7 minutes or until golden and crispy.
- While the bread is toasting, slice the fresh mozzarella and cherry tomatoes into bite-sized pieces.
- Drizzle the toasted bread with extra virgin olive oil and rub each slice with a peeled garlic clove.
- Top each toasted bread slice with a few pieces of mozzarella and a handful of cherry or grape tomatoes.
- Season with salt and pepper to taste. Drizzle a little more olive oil on top.
