Description
A moist and flavorful dessert loaf inspired by classic apple fritters, featuring tender diced apples infused with cinnamon and the rich, nutty taste of brown butter.
Ingredients
Wet Ingredients
- 1/2 cup butter
- 2 eggs
- 1/2 cup milk
- 1/2 cup sugar
- 1/2 cup brown sugar
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
Fruit
- 2 apples, peeled and diced (preferably firm apples like Granny Smith)
Instructions
- Prepare Brown Butter: Melt the butter over medium heat in a skillet or saucepan. Continue cooking while stirring occasionally until the butter turns golden brown and releases a nutty aroma, then remove from heat and let it cool.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, and cinnamon until well combined.
- Combine Wet Ingredients: In a separate bowl, whisk together the sugar, brown sugar, eggs, milk, and the cooled brown butter until smooth and homogenous.
- Combine Wet and Dry: Gradually add the wet mixture into the dry ingredients, stirring gently until just combined to avoid overmixing.
- Fold in Apples: Carefully fold the peeled and diced apples into the batter to distribute evenly.
- Prepare Baking Pan: Grease a loaf pan with butter or non-stick spray to prevent sticking.
- Bake: Pour the batter into the prepared loaf pan and bake in a preheated oven at 180°C (350°F) for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Remove the loaf from the oven and allow it to cool completely in the pan before slicing. Optionally, add a glaze for extra sweetness before serving.
Notes
- Use firm apple varieties such as Granny Smith to maintain texture and prevent the loaf from becoming too mushy.
- Optional: Drizzle a simple glaze made from powdered sugar and milk over the cooled loaf for added sweetness and moisture.
