Description

Crispy broccoli cheddar bites with a soft, cheesy center and a crunchy exterior, perfect for snacking, appetizers, or a healthy side dish.

Ingredients

  • 2 cups broccoli florets, chopped into small pieces
  • 1 cup shredded cheddar cheese
  • ½ cup breadcrumbs
  • 2 eggs, lightly beaten
  • ½ teaspoon garlic powder
  • Optional: salt and pepper, to taste

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the broccoli: Steam the broccoli florets until they are tender, about 5-7 minutes. Drain well and chop into small pieces. Alternatively, you can blanch the broccoli by boiling it for 2-3 minutes and then transferring it to ice water.
  3. Mix the ingredients: In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, eggs, garlic powder, and optional salt and pepper. Stir until everything is evenly mixed.
  4. Form the bites: Scoop spoonfuls of the mixture and shape them into small balls or patties. Place them on the prepared baking sheet.
  5. Bake the bites: Bake for 15-20 minutes, or until the bites are golden brown and crispy on the outside.
  6. Serve: Allow the bites to cool for a few minutes before serving. Enjoy them warm with your favorite dipping sauce!

Notes

  • Add red pepper flakes or cayenne pepper to the mixture for a spicy kick.
  • For different cheese options, try mozzarella, parmesan, or Monterey Jack for a unique twist.
  • Fresh or dried herbs like parsley, oregano, or thyme can add extra flavor to these bites.
  • For a gluten-free version, use gluten-free breadcrumbs or substitute with ground almonds or oats.
