Ingredients
- 2 large eggs

- 1/4 cup fresh spinach, chopped
- 1/4 cup diced tomato
- 1 tablespoon chopped onion (optional)
- 1/4 avocado, sliced (optional)
- Hot sauce or salsa, for serving (optional)
Instructions
- Crack the eggs into a bowl, add milk or water, and season with salt and pepper. Whisk until well combined.
- Heat olive oil or butter in a nonstick skillet over medium heat. Pour in the beaten eggs and cook, stirring occasionally, until fully cooked and scrambled, about 2-3 minutes.
- While the eggs cook, warm the tortilla in another pan or microwave for 10-15 seconds until soft and pliable.
- Once the eggs are cooked, set them aside. Place the warm tortilla on a flat surface. Layer the scrambled eggs in the center of the tortilla, then top with shredded cheese, spinach, diced tomato, and any optional toppings like avocado or onion.
- Carefully fold in the sides of the tortilla, then roll it up from the bottom to form a tight wrap.
- Slice the wrap in half if desired, and serve with a side of salsa or hot sauce for extra flavor.
