Description

This flavorful and aromatic Moroccan couscous recipe is a delightful blend of spices, tender chicken, and sweet dried fruits. It’s a perfect dish to impress guests or enjoy with family for a special dinner.

Ingredients

For the Couscous:

  • 1 cup couscous
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Moroccan spice blend
  • 2 tablespoons olive oil
  • 1 onion, chopped

For the Garnish:

  • 1/2 cup mixed dried fruits (apricots, raisins, prunes)
  • 1/4 cup slivered almonds
  • Fresh cilantro, chopped

Instructions

  1. Cook the Couscous: In a saucepan, bring the chicken broth, olive oil, salt, and pepper to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. Prepare the Chicken: Rub the Moroccan spice blend onto the chicken breasts. Heat olive oil in a skillet, add the chicken, and cook until browned on both sides. Remove the chicken and sauté the chopped onion in the same pan.
  3. Combine and Serve: Slice the cooked chicken and arrange on a bed of couscous. Top with sautéed onions, mixed dried fruits, slivered almonds, and chopped cilantro. Serve hot and enjoy!

Notes

  • You can customize the spice level by adjusting the amount of Moroccan spice blend.
  • Feel free to add other dried fruits or nuts for variation.
  • For a vegetarian version, substitute chickpeas or tofu for the chicken.
