Description

Breakfast Bombs are bite-sized, hand-held delights filled with scrambled eggs, cheese, and beef or sausage, wrapped in a fluffy biscuit or dough. Perfect for a quick breakfast, meal prep, or brunch, they’re customizable and packed with flavor.


Ingredients

  • 1 can of refrigerated biscuit dough (or pizza dough)
  • 4 large eggs (scrambled)
  • 1/2 cup shredded cheddar cheese (or your preferred cheese)
  • 4 slices cooked beef or 1/2 cup cooked sausage (crumbled)
  • Salt and pepper to taste
  • 1 tablespoon butter (for greasing)
  • Optional: 1 tablespoon fresh chives or parsley (for garnish)
  • Optional: 1 tablespoon melted butter (for brushing on top before baking)

Instructions

  1. Prepare the filling: Cook the beef or sausage until crispy and crumbled. Set aside. Scramble the eggs with salt and pepper until cooked but soft. Remove from heat and set aside.
  2. Preheat the oven: Preheat to 375°F (190°C). Grease a muffin tin with butter or line with muffin liners.
  3. Prepare the dough: Separate the dough into biscuits or cut pizza dough into 3-4 inch circles.
  4. Assemble the breakfast bombs: Flatten each dough circle, add scrambled eggs, beef/sausage, and cheese. Carefully seal the dough around the filling.
  5. Form the bombs: Pinch the dough to seal and form a ball. Place in muffin tin. Optionally, brush with melted butter for a golden finish.
  6. Bake: Bake for 15-18 minutes, or until golden brown and cooked through.
  7. Serve: Let cool for a few minutes, garnish with herbs if desired, and enjoy!

Notes

  • Feel free to add sautéed vegetables or hashbrowns to the filling for extra flavor and texture.
  • For a vegetarian version, skip the meat and add more veggies or tofu.
  • If making ahead, refrigerate the assembled bombs and bake them fresh in the morning for optimal texture.
