Description

Breakfast Biscuit Casserole combines layers of savory breakfast sausage, scrambled eggs, cheddar cheese, and biscuit pieces, topped with rich country gravy, making it the perfect hearty breakfast or brunch dish.


Ingredients

  • 2 tbsp unsalted butter (for sautéing the onions)
  • ½ onion, diced
  • 10 oz refrigerated biscuit dough, cut into 2-inch pieces
  • ½ cup whole milk or heavy cream
  • 5 eggs
  • 1 tsp oregano
  • 1½ cups shredded cheddar cheese
  • 1 lb breakfast sausage
  • 1½ cups prepared country gravy

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a skillet over medium heat, melt the butter. Add the diced onion and sauté for 3-4 minutes until softened and slightly caramelized. Set aside.
  3. In the same skillet, cook the breakfast sausage over medium heat, breaking it apart as it cooks. Once browned and fully cooked, drain excess grease and set the sausage aside.
  4. Cut the refrigerated biscuit dough into 2-inch pieces.
  5. In a bowl, whisk together the eggs, milk (or heavy cream), oregano, and a pinch of salt and pepper. Mix well until combined.
  6. In the prepared baking dish, layer the biscuit pieces on the bottom. Then, top with the sautéed onions, cooked sausage, and 1 cup of shredded cheddar cheese. Pour the egg mixture evenly over the top.
  7. Spoon the prepared country gravy over the casserole. Sprinkle the remaining ½ cup of shredded cheddar cheese on top.
  8. Place in the oven and bake for 30-35 minutes, or until the casserole is set, and the top is golden brown and bubbly.
  9. Let it cool for a few minutes before cutting into squares and serving.

Notes

  • For a spicier version, use spicy sausage or add diced jalapeños.
  • For a vegetarian option, substitute sausage with plant-based sausage or vegetables like bell peppers and mushrooms.
  • If you don’t want gravy, you can skip it and use extra cheese or milk for a creamier texture.
  • Make ahead by assembling the casserole the night before and refrigerating overnight. Add 5-10 extra minutes to the cooking time if baking from the fridge.
