Breakfast Bagel Sliders are mini bagel sandwiches packed with eggs, cheese, and your favorite breakfast meats, making them a satisfying and portable morning meal perfect for brunches or meal prepping.
Ingredients
- 6 mini bagels, sliced in half
- 6 large eggs
- 6 slices cooked beef or sausage patties
- 6 slices cheddar cheese
- 2 tablespoons milk
- Salt and pepper, to taste
- 1 tablespoon butter
- Optional toppings: sliced avocado, tomato, spinach, or hot sauce
Instructions
- Preheat oven to 350°F (175°C). Lightly toast bagel halves if desired.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Heat butter in a nonstick skillet over medium heat. Scramble the eggs until just set, then remove from heat.
- Place bottom halves of the mini bagels on a baking sheet.
- Layer scrambled eggs, cheese slices, and cooked beef or sausage on each bagel bottom.
- Add any optional toppings, then cover with the top halves of the bagels.
- Bake in the oven for 5–7 minutes, or until the cheese is melted and sliders are heated through.
- Serve warm, or wrap individually for on-the-go breakfasts.

- Make ahead and refrigerate or freeze for easy breakfasts during the week.

- Use English muffins or small rolls if mini bagels are unavailable.
