Description

Ingredients

  • 2 teaspoons baking powder

  • ½ cup plain Greek yogurt
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 cup fresh or frozen blueberries
  • Zest of 1 lemon (optional)


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly to prevent sticking.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. Mix Wet Ingredients: In a separate large bowl, whisk together the plain Greek yogurt, granulated sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth and creamy.
  4. Combine Ingredients: Gradually add the dry ingredients to the wet mixture and gently stir until just combined, being careful not to overmix to keep the bread tender.
  5. Fold in Blueberries and Lemon Zest: Toss the blueberries with a bit of flour to help prevent sinking, then gently fold them along with the lemon zest into the batter.
  6. Bake the Bread: Pour the batter evenly into the prepared loaf pan. Bake in the preheated oven for 55 to 60 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
