Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly to prevent sticking.
- Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- Mix Wet Ingredients: In a separate large bowl, whisk together the plain Greek yogurt, granulated sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth and creamy.
- Combine Ingredients: Gradually add the dry ingredients to the wet mixture and gently stir until just combined, being careful not to overmix to keep the bread tender.
- Fold in Blueberries and Lemon Zest: Toss the blueberries with a bit of flour to help prevent sinking, then gently fold them along with the lemon zest into the batter.
- Bake the Bread: Pour the batter evenly into the prepared loaf pan. Bake in the preheated oven for 55 to 60 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve once cooled.
