Blueberry Cream Cheese Bread is a moist, flavorful treat that blends the tart sweetness of fresh blueberries with the creamy richness of cream cheese. This easy-to-make loaf is perfect for breakfast, a snack, or dessert, with a delightful crumb that makes every bite feel special.
Ingredients
- 1 cup of fresh blueberries
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup milk
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a small bowl, mix the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened cream cheese, butter, and sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with sour cream (or Greek yogurt), milk, and lemon juice. Start and end with the dry ingredients.
- Gently fold in the blueberries, being careful not to break them up too much.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- If using frozen blueberries, toss them in a bit of flour to prevent them from sinking to the bottom.
- You can substitute the cream cheese with sour cream or Greek yogurt for a similar moist texture.
- If the bread is browning too fast on top, cover it with aluminum foil and continue baking until fully cooked.
- For a nutty twist, add 1/2 cup of chopped nuts like walnuts or pecans.
- Consider adding orange zest for a different citrusy flavor.
