Ingredients

  • 1 cup of fresh blueberries
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup milk
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a small bowl, mix the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened cream cheese, butter, and sugar until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with sour cream (or Greek yogurt), milk, and lemon juice. Start and end with the dry ingredients.
  6. Gently fold in the blueberries, being careful not to break them up too much.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  • If using frozen blueberries, toss them in a bit of flour to prevent them from sinking to the bottom.
