Ingredients
- 1 cup fresh blackberries (or thawed frozen blackberries)
- 1–2 tbsp simple syrup or honey (optional, to taste)

Instructions
- In a small blender or food processor, blend the blackberries until smooth.
- Strain the puree through a fine mesh sieve to remove the seeds and pulp. You should have about ¼ cup of blackberry juice.
- Pour about 1 tablespoon of the blackberry juice into each champagne flute.
- If you prefer a sweeter drink, add simple syrup or honey to taste. Stir gently to combine.
- Top off with champagne or sparkling wine and garnish with whole blackberries and a sprig of mint.
