Ingredients

Dry Ingredients

  • 3 cups whole wheat flour
  • 1 cup bread flour
  • 2 tsp yeast
  • 1 tsp salt
  • 1/4 cup mixed seeds (sunflower, flax, sesame)

Wet Ingredients

  • 1 tbsp honey
  • 1 1/2 cups warm water
  • 2 tbsp olive oil


Instructions

  1. Activate Yeast: In a small bowl, combine the yeast with warm water and honey. Stir gently to dissolve and let it sit for about 5-10 minutes until the mixture becomes frothy and active, indicating the yeast is ready.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, bread flour, salt, and mixed seeds ensuring even distribution of the seeds throughout the flour mixture.
  3. Combine & Knead Dough: Pour the activated yeast mixture and olive oil into the dry ingredients. Using your hands or a stand mixer fitted with a dough hook, knead the dough until it is smooth and elastic, approximately 8-10 minutes. The dough should be slightly tacky but not sticky.
  4. First Rise: Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Shape the Loaf: Once risen, gently punch down the dough to release air bubbles. Shape it into a loaf by tucking edges underneath to form a smooth top. Place it into a greased loaf pan or on a baking sheet.
  6. Second Rise: Cover the loaf again and allow it to rise for another 45 minutes, until it has puffed up noticeably but not doubled again.
  7. Bake the Bread: Preheat the oven to 180°C (350°F). Bake the loaf for 30 to 35 minutes until the crust is golden brown and a tap on the bottom sounds hollow, indicating it is fully baked.
  8. Cool Before Slicing: Remove the bread from the oven and let it cool completely on a wire rack before slicing. This prevents the bread from becoming gummy and preserves its soft texture.
