Description
Beef with Creamy Rice is a hearty, comforting dish combining tender beef with creamy rice in a savory sauce. It’s the perfect meal for busy weeknights or cozy family dinners, with rich flavors and a creamy texture that everyone will love.
Ingredients
- 1 lb ground beef (or stew beef, diced into bite-sized pieces)
- 1 tablespoon olive oil
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 cup long-grain white rice (or your preferred rice)
- 2 cups beef broth (or chicken broth)
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 tablespoon soy sauce (optional for extra flavor)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the beef, season with salt and pepper, and cook for 5-7 minutes until browned. Remove the beef and set aside.
- In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the garlic and cook for another minute until fragrant.
- Add the rice to the skillet and stir to combine. Toast the rice for 2-3 minutes to bring out its flavor.
- Pour in the beef broth, heavy cream, soy sauce (if using), thyme, rosemary, salt, and pepper. Stir to combine and bring the mixture to a simmer.
- Cover the skillet and reduce the heat to low. Let the rice cook for 15-20 minutes, or until tender and the liquid is absorbed. Add more broth or water if necessary to prevent the rice from drying out.
- Once the rice is cooked, return the beef to the skillet and stir to combine. Simmer for another 5 minutes to combine the flavors and heat everything through.
- Garnish with fresh parsley and serve hot.
Notes
- For a spicier version, add chili flakes or diced jalapeños while cooking the onions and garlic.
- If using brown rice, adjust the cooking time and liquid as it requires more time to cook.
- Substitute the beef with ground turkey or chicken for a lighter version.
- This recipe can be made dairy-free by using coconut cream or a dairy-free cream alternative.
