Description
A flavorful and convenient one-pan beef taco skillet combining seasoned ground beef, rice, vegetables, and melted cheddar cheese, making a perfect quick and hearty meal for weeknights.
Ingredients
Meat
- 1 lb ground beef
Grains
- 1 cup uncooked rice
Liquids
- 2 cups beef broth
Seasonings and Spices
- 1 packet taco seasoning
- Salt, to taste
Vegetables
- 1 cup corn kernels
- 1 cup diced tomatoes
Dairy
- 1 cup shredded cheddar cheese
Instructions
- Brown the beef: In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked through. Once done, drain the excess grease carefully.
- Add rice and liquids: To the same skillet with the beef, add uncooked rice, beef broth, and the packet of taco seasoning. Stir well to combine the seasoning evenly.
- Add vegetables: Mix in the corn kernels and diced tomatoes thoroughly with the beef and rice mixture.
- Simmer: Bring the mixture to a rolling boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer gently for 18 to 20 minutes, or until the rice is tender and liquid is absorbed.
- Add cheese and serve: Remove the skillet from heat, sprinkle the shredded cheddar cheese over the top, stirring gently until the cheese melts. Serve immediately while hot.
Notes
- For garnish, consider fresh cilantro, sour cream, or sliced avocado to add freshness and creaminess.
- Substitute white rice with brown rice; note that brown rice will require additional liquid and longer cooking time.
