A wholesome spin on traditional shepherd’s pie! Ground beef and vegetables are simmered in a savory sauce, then topped with creamy mashed sweet potatoes for a cozy, flavorful comfort food dinner.
Ingredients
For the Beef Filling:
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef
- 2 carrots, diced
- 1 cup peas (fresh or frozen)
- 1 cup corn (fresh or frozen)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup beef broth
- Salt and pepper, to taste
For the Sweet Potato Topping:
- 2 lbs sweet potatoes, peeled and cubed
- 2 tablespoons butter
- ¼ cup milk (or cream)
- ½ teaspoon cinnamon (optional, for warmth)
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Make topping: Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, cinnamon, salt, and pepper. Set aside.
- Heat olive oil in a large skillet. Add onion and garlic; sauté 2–3 minutes. Add ground beef and cook until browned, breaking it apart. Stir in carrots, peas, corn, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour in beef broth; simmer 5–7 minutes until thickened slightly. Transfer beef mixture to a baking dish. Spread mashed sweet potatoes evenly on top. Bake 25–30 minutes, until topping is lightly golden and filling is bubbling.
- Cool slightly before serving.
Notes
- For extra flavor, add a sprinkle of Parmesan or cheddar cheese on top before baking.
- Can be assembled ahead and refrigerated up to 24 hours before baking.
- Swap ground beef for ground turkey or lamb for variations.
