Description

A wholesome spin on traditional shepherd’s pie! Ground beef and vegetables are simmered in a savory sauce, then topped with creamy mashed sweet potatoes for a cozy, flavorful comfort food dinner.


Ingredients

For the Beef Filling:

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 carrots, diced
  • 1 cup peas (fresh or frozen)
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup beef broth
  • Salt and pepper, to taste

For the Sweet Potato Topping:

  • 2 lbs sweet potatoes, peeled and cubed
  • 2 tablespoons butter
  • ¼ cup milk (or cream)
  • ½ teaspoon cinnamon (optional, for warmth)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Make topping: Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, cinnamon, salt, and pepper. Set aside.
  2. Heat olive oil in a large skillet. Add onion and garlic; sauté 2–3 minutes. Add ground beef and cook until browned, breaking it apart. Stir in carrots, peas, corn, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  3. Pour in beef broth; simmer 5–7 minutes until thickened slightly. Transfer beef mixture to a baking dish. Spread mashed sweet potatoes evenly on top. Bake 25–30 minutes, until topping is lightly golden and filling is bubbling.
  4. Cool slightly before serving.

Notes

  • For extra flavor, add a sprinkle of Parmesan or cheddar cheese on top before baking.
  • Can be assembled ahead and refrigerated up to 24 hours before baking.
  • Swap ground beef for ground turkey or lamb for variations.
