Instructions
- Brown the Beef: Heat the oil or butter in a large pot or Dutch oven over medium-high heat. Add the cubed beef stew meat and brown on all sides until a deep golden color develops. Remove the beef from the pot and set aside.

- Add Flour and Tomato Paste: Stir in the tablespoon of flour and tomato paste, cooking for an additional 1-2 minutes to remove the raw flour taste and blend the flavors.
- Deglaze with Guinness and Broth: Pour in the Guinness stout and beef broth, stirring to deglaze the pot and incorporate all browned bits from the bottom.
- Season and Combine: Add the thyme, salt, and pepper to taste. Return the browned beef back into the pot and add the cubed potatoes.
- Simmer: Reduce the heat to low and cover. Let the stew simmer gently for about 2 hours, or until the beef is tender and the flavors are well developed.
