Description

This BBQ Chicken and Potato Bake is a hearty and flavorful one-pan meal combining tender chicken pieces with soft, seasoned potatoes baked to perfection in a tangy barbecue sauce. Perfect for a comforting dinner, this recipe brings together smoky, savory BBQ flavors with the earthy taste of potatoes, all cooked together in the oven for an easy and satisfying dish.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Potatoes

  • 1.5 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Optional Garnish

  • Fresh chopped parsley
  • Grated cheddar cheese (optional)

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and allow it to fully preheat while preparing the ingredients.
  2. Prepare the potatoes: In a large bowl, toss the halved baby potatoes with 2 tablespoons olive oil, dried thyme, salt, and pepper until evenly coated. Spread them out in a single layer in a large baking dish.
  3. Season the chicken: In another bowl, coat the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper. Then pour the barbecue sauce over the chicken and mix until each piece is well covered.
  4. Combine chicken and potatoes: Nestle the sauced chicken breasts on top of the potatoes in the baking dish, making sure some BBQ sauce drizzles over the potatoes as well.
  5. Bake the dish: Place the baking dish in the preheated oven. Bake uncovered for 35-40 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the potatoes are tender when pierced with a fork.
  6. Optional finishing touch: If desired, sprinkle grated cheddar cheese over the top of the bake during the last 5 minutes of cooking to melt.
  7. Garnish and serve: Remove from oven and garnish with freshly chopped parsley. Serve hot straight from the dish for a hearty meal.

Notes

  • You can substitute baby potatoes with regular potatoes cut into 1-inch cubes.
  • Use your favorite barbecue sauce for different flavor profiles, such as smoky, spicy, or sweet varieties.
  • For even cooking, try to use chicken breasts of similar size and thickness; you can pound them slightly if needed.
  • This dish can be prepared a few hours ahead and refrigerated before baking; just add a few extra minutes to the cooking time if using cold ingredients.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
