Ingredients

  • 1 lb chicken breast, cut into small strips or bite-sized pieces
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil (for frying)
  • 1/2 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey

Instructions

  1. Prepare the chicken: In a shallow bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. In a separate bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.
  2. Coat the chicken: Dip each chicken strip first in the flour mixture, then in the beaten eggs, and finally coat it in the panko breadcrumbs. Repeat for all chicken pieces.
  3. Fry the chicken: Heat vegetable oil in a deep skillet or frying pan over medium-high heat. Once the oil is hot (about 350°F/175°C), carefully fry the chicken in batches, cooking for 3-4 minutes per side, or until golden brown and crispy. Remove the chicken from the oil and drain on paper towels.
  4. Make the Bang Bang sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth and creamy. Adjust the amount of sriracha to your desired spice level.
  5. Assemble the sliders: Lightly toast the slider buns in the oven or on a grill. Spread a generous amount of the Bang Bang sauce on the bottom half of each slider bun. Add a few pieces of crispy chicken on top, followed by lettuce and pickles, if desired. Drizzle more Bang Bang sauce over the chicken for extra flavor.
