Description
Fluffy homemade pancakes topped with a luscious caramelized banana sauce made with buttery brown sugar, cinnamon, and a hint of rum extract, inspired by the classic Bananas Foster dessert.
Ingredients
Pancakes:
- 1 ½ cups flour
- 1 tbsp sugar
- 1 ½ tsp baking powder
- 1 egg
- 1 cup milk
- 1 tbsp melted butter
Bananas Foster Topping:
- 2 ripe bananas, sliced
- 3 tbsp butter
- ¼ cup brown sugar
- 1 tbsp maple syrup or rum extract
- Dash of cinnamon
Instructions
- Prepare Pancake Batter: In a mixing bowl, combine the flour, sugar, and baking powder. Whisk together the egg, milk, and melted butter separately, then add to dry ingredients, stirring until just combined to avoid overmixing.
- Cook Pancakes: Heat a greased griddle or non-stick skillet over medium heat. Pour batter onto the griddle to form pancakes of desired size. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more. Repeat with remaining batter.
- Make Bananas Foster Sauce: In a skillet over medium heat, melt the butter. Stir in the brown sugar, maple syrup or rum extract, and cinnamon until the sugar dissolves and mixture begins to bubble gently.
- Add Bananas: Add the sliced bananas to the skillet, and simmer for 2-3 minutes, gently stirring occasionally, until bananas are soft and caramelized but not mushy.
- Serve: Spoon the warm banana sauce over the stack of pancakes. Optionally, add a dollop of whipped cream or a scoop of vanilla ice cream for a dessert-style treat.
Notes
- For authentic flavor, substitute maple syrup with a splash of rum or rum extract in the topping.
- Top with whipped cream or vanilla ice cream to transform this into a decadent dessert.
- Use ripe but firm bananas to ensure they hold shape during cooking.
- Ensure skillet is not too hot when cooking bananas to prevent burning the sugar.
