Description

Fluffy homemade pancakes topped with a luscious caramelized banana sauce made with buttery brown sugar, cinnamon, and a hint of rum extract, inspired by the classic Bananas Foster dessert.

Ingredients

Pancakes:

  • 1 ½ cups flour
  • 1 tbsp sugar
  • 1 ½ tsp baking powder
  • 1 egg
  • 1 cup milk
  • 1 tbsp melted butter

Bananas Foster Topping:

  • 2 ripe bananas, sliced
  • 3 tbsp butter
  • ¼ cup brown sugar
  • 1 tbsp maple syrup or rum extract
  • Dash of cinnamon

Instructions

  1. Prepare Pancake Batter: In a mixing bowl, combine the flour, sugar, and baking powder. Whisk together the egg, milk, and melted butter separately, then add to dry ingredients, stirring until just combined to avoid overmixing.
  2. Cook Pancakes: Heat a greased griddle or non-stick skillet over medium heat. Pour batter onto the griddle to form pancakes of desired size. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more. Repeat with remaining batter.
  3. Make Bananas Foster Sauce: In a skillet over medium heat, melt the butter. Stir in the brown sugar, maple syrup or rum extract, and cinnamon until the sugar dissolves and mixture begins to bubble gently.
  4. Add Bananas: Add the sliced bananas to the skillet, and simmer for 2-3 minutes, gently stirring occasionally, until bananas are soft and caramelized but not mushy.
  5. Serve: Spoon the warm banana sauce over the stack of pancakes. Optionally, add a dollop of whipped cream or a scoop of vanilla ice cream for a dessert-style treat.

Notes

  • For authentic flavor, substitute maple syrup with a splash of rum or rum extract in the topping.
  • Top with whipped cream or vanilla ice cream to transform this into a decadent dessert.
  • Use ripe but firm bananas to ensure they hold shape during cooking.
  • Ensure skillet is not too hot when cooking bananas to prevent burning the sugar.
