Tender balsamic chicken thighs baked alongside caramelized bell peppers and zucchini, creating a sweet and tangy one-pan meal that’s easy to prepare and perfect for a wholesome dinner.
Ingredients
Chicken
- 4 chicken thighs
Glaze
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tbsp honey (or low-carb syrup)
Vegetables
- 1 cup bell peppers, sliced
- 1 cup zucchini, chopped
Instructions
- Preheat the oven: Set your oven to 400 °F (200 °C) to prepare for roasting.
- Prepare the glaze: In a small bowl, combine the balsamic vinegar, olive oil, and honey (or low-carb syrup) to create a sweet and tangy glaze.
- Toss the vegetables: Place the sliced bell peppers and chopped zucchini in a bowl and toss them with half of the balsamic glaze to coat evenly.
- Arrange chicken and vegetables: Spread the glazed vegetables on a baking sheet and place the chicken thighs among them, ensuring everything is in a single layer.
- Roast the dish: Place the baking sheet in the preheated oven and roast for 25 to 30 minutes.
- Glaze midway through cooking: About halfway through roasting, brush the chicken thighs with the remaining balsamic glaze to boost flavor and caramelization.
- Check for doneness: Ensure the chicken reaches an internal temperature of 165°F (74°C) and that the vegetables are tender and slightly caramelized before removing from oven.
Notes
- Add cherry tomatoes for extra flavor and a pop of color.
- You can substitute chicken thighs for breasts if preferred, but adjust cooking time accordingly.
- For a lower sugar option, use a sugar-free syrup instead of honey.
- Serve with a side of cauliflower rice or a fresh green salad for a complete meal.
