  • 1 cup zucchini, chopped


Instructions

  1. Preheat the oven: Set your oven to 400 °F (200 °C) to prepare for roasting.
  2. Prepare the glaze: In a small bowl, combine the balsamic vinegar, olive oil, and honey (or low-carb syrup) to create a sweet and tangy glaze.
  3. Toss the vegetables: Place the sliced bell peppers and chopped zucchini in a bowl and toss them with half of the balsamic glaze to coat evenly.
  4. Arrange chicken and vegetables: Spread the glazed vegetables on a baking sheet and place the chicken thighs among them, ensuring everything is in a single layer.
  5. Roast the dish: Place the baking sheet in the preheated oven and roast for 25 to 30 minutes.
  6. Glaze midway through cooking: About halfway through roasting, brush the chicken thighs with the remaining balsamic glaze to boost flavor and caramelization.
  7. Check for doneness: Ensure the chicken reaches an internal temperature of 165°F (74°C) and that the vegetables are tender and slightly caramelized before removing from oven.
