Description

Zucchini tots are a healthier twist on classic tater tots, made with shredded zucchini, cheese, and simple seasonings. Crispy on the outside and tender inside, they’re perfect as a snack, side dish, or kid-friendly appetizer.


Ingredients

Zucchini Mixture

  • 2 cups zucchini, shredded
  • ½ teaspoon salt
  • 1 cup shredded cheddar or mozzarella cheese
  • ½ cup breadcrumbs (or gluten-free breadcrumbs)
  • 1 large egg
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Remove Moisture: Place the shredded zucchini in a clean towel, sprinkle with salt, and squeeze out as much moisture as possible. This step is crucial to achieve crispy tots.
  3. Mix Ingredients: In a mixing bowl, combine the drained zucchini, shredded cheese, breadcrumbs, egg, garlic powder, onion powder, and black pepper. Mix well until evenly incorporated.
  4. Shape Tots: Scoop about 1 tablespoon of the mixture and shape it into small tot shapes using your hands or a spoon. Place each shaped tot onto the prepared baking sheet.
  5. Prepare for Baking: Lightly spray the tops of the tots with cooking spray or olive oil spray to help them brown and become crispy in the oven.
  6. Bake: Bake the tots for 20–25 minutes, flipping them halfway through the baking time to ensure even crisping and golden color on all sides.
