Zucchini Mixture
- 2 cups zucchini, shredded
- ½ teaspoon salt
- 1 cup shredded cheddar or mozzarella cheese
- ½ cup breadcrumbs (or gluten-free breadcrumbs)
- 1 large egg
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Black pepper, to taste

Instructions
- Preheat Oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Remove Moisture: Place the shredded zucchini in a clean towel, sprinkle with salt, and squeeze out as much moisture as possible. This step is crucial to achieve crispy tots.
- Mix Ingredients: In a mixing bowl, combine the drained zucchini, shredded cheese, breadcrumbs, egg, garlic powder, onion powder, and black pepper. Mix well until evenly incorporated.
- Shape Tots: Scoop about 1 tablespoon of the mixture and shape it into small tot shapes using your hands or a spoon. Place each shaped tot onto the prepared baking sheet.
- Prepare for Baking: Lightly spray the tops of the tots with cooking spray or olive oil spray to help them brown and become crispy in the oven.
- Bake: Bake the tots for 20–25 minutes, flipping them halfway through the baking time to ensure even crisping and golden color on all sides.
- Serve: Remove from the oven and serve warm, optionally with ketchup, ranch, or a yogurt dip for added flavor.
