Ingredients

Dough:

  • 2 cups all-purpose flour
  • 1 tsp instant yeast
  • ½ tsp salt
  • ¾ cup warm water
  • 1 tbsp olive oil

Topping:

  • ½ lb (225 g) ground beef or lamb
  • 1 small onion, finely chopped
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • ½ tsp paprika
  • Salt and pepper to taste
  • 2 tbsp sesame seeds
  • 1 egg, beaten (for brushing)


Instructions

  1. Prepare the dough: In a bowl, combine the all-purpose flour, instant yeast, and salt. Add the warm water and olive oil, then knead the mixture until it forms a smooth dough. Cover and let it rise for 1 hour until doubled in size.
  2. Cook the minced meat: While the dough is rising, heat a skillet over medium heat. Add the ground beef or lamb along with the finely chopped onion, and cook, stirring occasionally, until the meat is browned and the onions are soft. Stir in the tomato paste, ground cumin, paprika, salt, and pepper. Cook for another minute, then remove from heat and let it cool slightly.
  3. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the bread.
  4. Shape the dough: Once risen, divide the dough into two equal pieces. On a lightly floured surface, roll each piece into an oval shape about ¼ inch thick.
  5. Add the topping: Evenly spread the cooled meat mixture over the dough ovals, leaving the edges of the dough clear. Brush the exposed edges with the beaten egg to help them brown beautifully. Sprinkle sesame seeds generously on the brushed edges.
  6. Bake the flatbreads: Place the prepared flatbreads onto a baking tray lined with parchment paper. Bake in the preheated oven for 12 to 15 minutes, or until the edges are golden brown and the bread is crisp.
  7. Serve: Remove from the oven and serve warm. These flatbreads pair wonderfully with yogurt or tahini sauce for a complete and satisfying meal.
