Description

A savory Middle Eastern–style flatbread topped with spiced minced meat and sesame seeds. This crispy, aromatic, and satisfying baked sesame bread combines ground beef or lamb with warm spices on a tender flatbread base, perfect as a main dish.

Ingredients

Dough

  • 2 cups all-purpose flour
  • 1 tsp yeast
  • ¾ cup warm water
  • 2 tbsp olive oil (divided)

Topping

  • ½ lb ground beef or lamb
  • 1 small onion, finely chopped
  • 1 tbsp sesame seeds
  • ½ tsp cumin
  • ½ tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Dough: In a large bowl, combine the all-purpose flour and yeast. Gradually add warm water and 1 tablespoon of olive oil, mixing until a smooth dough forms. Knead the dough on a floured surface for about 8-10 minutes until elastic and smooth. Place it in a lightly oiled bowl, cover, and let it rise for 1 hour until doubled in size.
  2. Cook the Meat Mixture: While the dough is rising, heat a skillet over medium heat. Add the finely chopped onion and sauté until translucent. Add the ground beef or lamb along with cumin, paprika, salt, and pepper. Cook thoroughly, stirring occasionally until browned and cooked through. Remove from heat and set aside.
  3. Shape the Flatbreads: Preheat the oven to 400°F (200°C). Once the dough has risen, divide it into 4 equal portions. Roll each portion into a flat round about ½ inch thick on a floured surface.
  4. Add Toppings: Spread a layer of the cooked minced meat mixture evenly over each flatbread. Sprinkle sesame seeds on top and drizzle each with a little remaining olive oil to enhance flavor and crispness.
  5. Bake: Place the prepared flatbreads on a baking sheet lined with parchment paper. Bake in the preheated oven for 15 to 20 minutes, or until the edges are golden brown and the meat topping is sizzling.
  6. Serve: Remove from oven and let cool slightly before serving. These flatbreads pair excellently with yogurt or tahini sauce and can be garnished with parsley or pine nuts if desired.

Notes

  • Serve with yogurt or tahini sauce for added creaminess and tang.
  • Try adding chopped parsley or pine nuts as a garnish for extra flavor and texture.
  • You can substitute lamb with ground beef or use a mix based on preference.
  • Ensure the dough is kneaded well and given enough time to rise for a tender texture.
