Ingredients
Slaw:
- 3 cups shredded green cabbage (or coleslaw mix)
- 1 apple, thinly sliced or julienned (Honeycrisp recommended)
- 1 pear, thinly sliced or julienned
- ¼ cup dried cranberries
- ¼ cup sliced almonds or pumpkin seeds
Dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice (or apple cider vinegar)
- 1 tbsp honey or maple syrup
- ½ tsp Dijon mustard
- Salt & black pepper to taste
Instructions
- Combine ingredients. Place cabbage, apple, pear, cranberries, and almonds in a large bowl.
- Make the dressing. In a small bowl, whisk olive oil, lemon juice, honey/maple syrup, Dijon mustard, salt, and black pepper until well combined.
- Toss the slaw. Pour dressing over the slaw mixture and toss thoroughly to coat all ingredients evenly.
- Serve or chill. Serve immediately for a crisp texture or chill for 10–15 minutes to allow the flavors to meld beautifully.

- For extra crunch: add sunflower seeds or toasted pecans.
