Description

Moist and tender apple coffee cake layered with cinnamon sugar and topped with a silky vanilla glaze, perfect for breakfast or dessert.

Ingredients

Cake:

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup sour cream
  • 1 medium apple, peeled and chopped

Glaze:

  • ½ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350 °F (175 °C) and grease a 9×9-inch baking pan thoroughly to prevent sticking.
  2. Cream butter and sugar: In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy to create a smooth base for the cake batter.
  3. Add eggs and sour cream: Incorporate the eggs one at a time, then mix in the sour cream until the mixture is well combined and smooth.
  4. Combine dry ingredients and fold in apples: In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients into the wet mixture and gently fold in the chopped apple pieces evenly.
  5. Bake the cake: Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and glaze: Allow the cake to cool completely in the pan on a wire rack. In a small bowl, whisk powdered sugar, milk, and vanilla extract to create the glaze. Drizzle the glaze evenly over the cooled cake before serving.

Notes

  • Add a streusel topping made from butter, flour, brown sugar, and cinnamon before baking for extra crunch and flavor.
  • Use tart apples like Granny Smith for a nice balance of sweetness and acidity.
  • Ensure the cake is fully cooled before adding the glaze to prevent it from melting off.
  • You can substitute sour cream with Greek yogurt for a slightly tangier flavor.
