Description
Moist and tender apple coffee cake layered with cinnamon sugar and topped with a silky vanilla glaze, perfect for breakfast or dessert.
Ingredients
Cake:
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ cup sour cream
- 1 medium apple, peeled and chopped
Glaze:
- ½ cup powdered sugar
- 1 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat and prepare pan: Preheat your oven to 350 °F (175 °C) and grease a 9×9-inch baking pan thoroughly to prevent sticking.
- Cream butter and sugar: In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy to create a smooth base for the cake batter.
- Add eggs and sour cream: Incorporate the eggs one at a time, then mix in the sour cream until the mixture is well combined and smooth.
- Combine dry ingredients and fold in apples: In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients into the wet mixture and gently fold in the chopped apple pieces evenly.
- Bake the cake: Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and glaze: Allow the cake to cool completely in the pan on a wire rack. In a small bowl, whisk powdered sugar, milk, and vanilla extract to create the glaze. Drizzle the glaze evenly over the cooled cake before serving.
Notes
- Add a streusel topping made from butter, flour, brown sugar, and cinnamon before baking for extra crunch and flavor.
- Use tart apples like Granny Smith for a nice balance of sweetness and acidity.
- Ensure the cake is fully cooled before adding the glaze to prevent it from melting off.
- You can substitute sour cream with Greek yogurt for a slightly tangier flavor.
