Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg (optional)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 large apple, peeled and chopped into small chunks (Granny Smith or Honeycrisp work well)
- For the cinnamon sugar swirl:
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- For the glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Make the batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using). Set aside.
- Mix wet ingredients: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and sour cream.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The batter will be thick.
- Prepare the cinnamon sugar swirl: In a small bowl, combine the brown sugar and cinnamon for the swirl. Set aside.
- Assemble the bread: Spoon half of the batter into the prepared loaf pan and spread it evenly. Sprinkle half of the cinnamon sugar mixture on top of the batter. Add the chopped apple and then top with the remaining batter. Finally, sprinkle the rest of the cinnamon sugar mixture on top.
- Swirl the batter: Use a knife or a skewer to swirl the cinnamon sugar into the batter. Do this gently to create a marbled effect.
- Bake: Bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean. If the top is browning too quickly, you can cover it with aluminum foil during the last 15 minutes of baking.
- Prepare the glaze: While the bread is cooling, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle the glaze over the cooled bread once it’s out of the pan.
- Serve: Allow the bread to cool for about 15-20 minutes in the pan before removing it and allowing it to cool completely on a wire rack. Slice and enjoy!
Notes
- Add nuts: For extra crunch, stir in 1/2 cup of chopped walnuts or pecans to the batter along with the apples.
- Use a different fruit: You can substitute the apples with pears, peaches, or berries for a different fruity twist.
- Spices: Experiment with adding cloves, ginger, or allspice to the cinnamon sugar mixture for additional warmth and depth of flavor.
- Vegan version: Swap the butter with vegan butter, and use dairy-free sour cream or yogurt. Use a flax egg or another egg substitute to replace the eggs.
